Job Description Summary
Lab Technician personnel perform chemical and/or physical testing of raw materials, in-process product, and finished product to insure conformance to specifications.
Essential Duties and Responsibilities
Perform periodic chemical testing of in-process products, assessing factors such as moisture content, ph, texture, and fat and salt content. Collect product samples from production locations and prepare product for testing. Perform required tests, comparing results against specifications, and providing required test result documentation.
Perform periodic physical testing of in-process products, assessing factors such as product and raw material temperature product weight, correct dating, labeling, and UPC code designation and proper packaging presentation. Collect product samples from production locations and prepare product for testing. Perform required tests, comparing results with specifications, and providing required test result documentation.
Perform periodic grading and testing of finished products, assessing factors such as texture, mechanical defect, correct product weight, UPC code, date, labeling, and packaging. Assemble products from production areas or storage facilities and prepare product for testing. Perform required tests, comparing results with specifications, and providing required test result documentation.
Perform periodic chemical testing of raw materials, assessing factors such as moisture content, fat content, and pH levels. Collect product samples from raw material receiving/storage areas and prepare raw materials for testing. Perform required tests, comparing results with specifications, and providing required test result documentation.
Perform periodic testing relating to sanitation effectiveness in production areas. Collect required samples (swab surfaces and bag samples and collect sanitizer solution) and test for the level of sanitizer in the cleaning solution. Compare test results with specifications and alert maintenance personnel to adjust the sanitizer level via the automatic dispenser system, if necessary.
Perform bacteriological testing of the sanitation of the plant and of finished product assessing factors such as coliform count.
Calibrate and maintain laboratory test equipment.
Perform statistical calculations relating to test data. Enter test data into the computer system and prepare test result reports.
Follow all clean up and housekeeping procedures. Comply with all quality, safety, and work-rule requirements.
Follow all Good Manufacturing Practices as stated within the policy.
Follow all food safety procedures.
Perform other miscellaneous duties as assigned by management.
Requires a High School Diploma and/or equivalent experience.
Ability to read and understand laboratory procedures.
Ability to function as a team member and contribute to group goals.
Ability to operate a variety of office and laboratory equipment such as a personal computer, texture analyzer, incubator, PH meters, salt analyzer, scales, slide box and hot air oven.
Must be able to maintain (Appendix N) yearly certification, if required.
Requires proficiency in MS Office. (Word, Excel, etc.)
Requires good knowledge of testing procedures and documentation techniques.
Requires good oral communication skills to effectively deal with coworkers.
Technical skills in dairy/cheese production technologies preferred.

The check will bounce and the victim is left responsible.
